I have a pre-slim PS3 (AKA fat) connected via HDMI and have had no such problems. To troubleshoot, I suggest watching a regular DVD using your PS3 and see if you hear the same noise.

I'd go with the second option you laid out above (pair of 5DBs for side surround and pair of 6-IWs for rear surround).
